You’ll grate the coconut, work in the sugar and fresh ginger, and stir the mixture as it thickens and caramelizes, the part that takes patience and a steady hand so it doesn’t catch. Once it’s sticky enough to hold, you spread it out to cool and set, then it’s yours to take. It’s a short, sweet, hands-on introduction to Garifuna cooking, and a good one to do with kids or as an add-on to a bigger dish.

It runs in English, with Spanish on request, for groups of 1 to 15, private or shared. Everything starts at the Dibasei office.
